Gastronorm sizes are fractions of the 530 x 325mm GN 1/1 module – confirm the fraction (1/1, 1/2, 1/3, 1/6, 1/9) and the depth your bain-maries, chiller drawers and combi ovens accept, and decide whether each pan needs a lid for holding or transport. Standardising on GN sizes means pans, lids and inserts stay interchangeable across the whole kitchen.
